MAO DON places great emphasis on ingredient traceability, carefully selecting fresh seafood delivered daily and showcasing the rich, natural sweetness of seasonal produce and fish. We support local farmers and producers to ensure ingredient quality while promoting sustainability.

Our donburi dishes are prepared using Edo-style sushi techniques, preserving the original flavors of each ingredient, allowing your palate to enjoy different seasonal delights. The dining environment has been thoughtfully renovated in collaboration with a design team, preserving the cozy and nostalgic atmosphere of a traditional Tainan old house, reflecting our deep love for Taiwan’s land and its rich cultural heritage.
